INGREDIENTS:
• 2 eggs
• 2 slices of bread
• 1/2 avocado
• 2 tablespoons grated Kashar cheese
• fresh herbs, salt and pepper for topping
INSTRUCTIONS
1. Fill a wide casserole-type pan with water. You should use enough water to cover the eggs when they lay in the bottom.
2. Bring a pan of water to a simmer. Don't add any salt as this will break up the egg white.
3. Crack one of the eggs into a cup. Gently pour it into the water in one fluid movement. The yolk should follow the white. Stir the water to create a gentle whirlpool to help the egg white wrap around the yolk.
4. Cook for 2 minutes then turn off the heat and cover the pot leave the pan for 5 minutes. (4 for super soft, 4:30 for soft, 5 or more for semi-soft yolks).
5. While the eggs are poached, toast the 2 slices of bread and smash the avocado on each piece of toast.
6. When your egg is ready, remove it with the slotted spoon. ( If it feels too soft, put it back in the pan and give it a minute.)
7. Place the poached eggs on top of the toasted slices of bread. Sprinkle with grated Kashar cheese, salt, pepper, and fresh herbs; serve with the fresh vegetables.
